Hello Once Again Dear Reader! I hope life is going well for you, also hope that you are feeling good and that you are taking care of your mental health as it’s supposed to be. Now, I know it’s been quite a while since I wrote a blog; a month to be exact. But you know life is life; life with its ups and downs sometimes caught us in busy places, you know how it is; but here I am; as always, back, and strong and with a new meal option called Delicious and Fresh Keto Pico De Gallo for you to enjoy and to take into consideration.

I always admire all these beautiful keto friendly recipes out there on Instagram or YouTube; but let’s face it… not all of us have the time to make them daily. Especially on my case were I have found myself trying to juggle between post-covid life studies and life.

There is simply not enough time to get around the kitchen right?.

Obviously, choosing healthy options should be our main concern (and it is for us, fortunately); in fact, that is why I try to each by option I present here; to be fresh, to be easy to make, yet tasty so we can make daily, or store it for the week.

Not only cooking our meals are going to save us huge amounts of money monthly; but is also I always say; the primary way for us to take care of our own selves and mental health.

This Delicious and Fresh Keto Pico De Gallo recipe is another lovely option I like to considerate for anytime really, from breakfast to lunch, to dinner; or why the hell not? even gatherings for a taco night or bbq night.

Pico de Gallo translates literally to “rooster’s beak” in Spanish. Some believe this is since it was initially eaten by pinching between the finger and thumb of the rooster, forming a beak shape.  However, Pico de Gallo has no connection to a rooster or birds. (in case your were wondering)

This dish it’s been found in all over Latin culture (I know I love it with some chorizos or a fine steak on the side) and being a key ingredient for Hispanic dishes, Pico de Gallo contains less liquid as compared to other salsas while retaining the same spicy and sour taste. Pico de Gallo, like most salsas, contains tomatoes and other strong ingredients.

Obviously, we made this version a keto Friendly one, very low in carb and low calorie as well, but still super tasty and quick to make and the best part of it all is that is so healthy that Pico de Gallo is known to help prevent colds and boost your immune system.

Ingredients we will need for our Delicious and Fresh Keto Pico De Gallo Recipe

4 large tomatoes

1/2 red onion finely diced

1 clove garlic finely chopped

1-2 red chili’s finely chopped

2 tablespoons cilantro finely chopped

1/4 cup olive oil

1 lime juice only

1/2 teaspoon sea salt flakes

pinch pepper ground

  • Cut the tomatoes into quarters and remove the seeded center. Dice the tomato flesh and place into a mixing bowl.
  • Add the remaining ingredients and mix well.
  • Serve straight away.
