Easy and Delicious Keto Mojito

Hello Dear Reader; hope you are feeling good, in good terms with existence and taking care of your mental health as it should always be. Here I bring this brand-new recipe very fond to me called Keto Mojito, originally from my country Venezuela.
Since we are currently still on lent time (almost finished by the way đ) we are very much experimenting with all these fish dishes we find tasty, light, and easy to digest. Very few ingredients required as well!
This recipe is one goody; noble and easy to make you wouldnât want to miss. The perfect new addition to our: No shortcuts this time section!
If you are currently on summertime; this one will feel light to your taste; and if you are one seafood lover like us, this is a go to anytime really.
The original recipe has carrots into the recipe which gives the dish a natural sweet taste; in this matter we wonât be adding any carrot to our recipe since is not very much Keto Friendly, but do not worry Dear Reader, with the extra capsicum we will give this sweet taste and will allow the recipe to remain as keto friendly-Low carb as it should be.
Later, we will bring this amazing âKeto Arepa Recipeâ (which is Venezuelan and Colombian kind of bread); and oh my god I cannot begin to tell you how good this is with that.
Since like I said we are on Lent time we are not eating keto breads substitutes, but do not worry!! That will come and you will love it foooor sure! Either of ways; for this ocation we will be having our delicious Keto Mojito with some Lettuce; which will add some extra fiber, vitamin A and texture along with the great taste.

Letâs begin with our recipe, shall we?
Ingredients we will need for our Easy and Delicious Keto Mojito Recipe
- 1 branch of celery
- 40g leek
- 1/2 onion
- 20 Gr red capsicum;
- 20Â Gr Yellow Capsicum
- And 20 Gr Green capsicum
- 500 ml water
- 20 Ml Extra Virgin Olive or Avocado oil Extra Virgin
- 400g tilapia fish
- salt and pepper to taste.
Preparation for our Easy and Delicious Keto Mojito Recipe
1.- Over medium heat, in a pot, place the 500 ml of water together with the 4 tilapia fish fillets. (This is to start cooking our fish broth)
2.- Then we add 20 Gr of leek; 1/2 branch celery + pepper and salt to taste with the fish.
3.- Let the fish cook for 20 minutes with the rest of the ingredients.
4.- While we wait for the broth to be ready; We proceed to chop the rest of the vegetables into small squares.
5.- After 20 minutes; Remove the pot from the heat and strain the broth aside to use it later.
6.- Then; we shred the tilapia fish completely with a fork and let it rest.
7.- After having all our ingredients ready; We return to medium heat and with a frying pan we add the 20 Ml of our oil.
8.- Once hot, add the vegetables to fry. We start with the capsicum. After two minutes, add the leek and onion. Mix Well.
9.- Add the shredded fish and mix.
10.- Finally; We take the fish broth and pour it over the mixture.
11.- Add salt and pepper to taste.
12.- Stir until dry.
Voila! Our Keto Mojito is ready to consume!
